Easy Back to School Crock Pot Recipes

It's that time of year again when the kids go back to school. You have to start getting up a little earlier every morning to get breakfast going and make your children's lunches. But your work does not stop there. Don't forget about carpooling your children around to and from their after school activities. With all this going on, you still have to have a hot and healthy meal on the table for the family dinner.
With this in mind, may I propose some crock pot cooking. The family breakfast can be made the night before in the crock pot, cook all night while you sleep, and be ready for your family in the morning. You can also throw together a couple ingredients in your slow cooker before work and have a hot and delicious meal come...
dinner time. It's hard to juggle all the family responsibilities when your children go back to school, but I hope these easy crock pot recipes will alleviate some of your parental stress.
Cheesy Bacon Potatoes
What you need:
• 4 large potatoes, peeled and sliced
• 6 slices of bacon, cooked and crumbled
• 2 T butter
• 8 oz cheddar cheese, shredded
• 1 medium onion, chopped
• 1/2 c green pepper, diced
• 1 t salt
What you do:
• Add half the potatoes to bottom of crock-pot. Top with 1/2 of the bacon, green pepper, onion, butter, salt and cheese. Add remaining potatoes and top with remaining ingredients, ending with cheese. Cook, covered, for 6-8 hours on low, making sure potatoes are tender.
• Start slow cooker before you go to bed at night for a delicious breakfast complement to your eggs.
Slow Cooked Beef Barbecue
What you need:
• 3-4 lb beef roast
• 3 T spicy brown mustard
• 13/4 c ketchup
• 1/4 c brown sugar
• 1/3 c red wine vinegar
• 21/2 T Worcestershire sauce
• 1/4 t garlic powder
• 1/2 t fresh ground black pepper
• 1/2 t salt
• 2 t liquid smoke
• 1 medium onion, diced
What you do:
• Place all ingredients, except roast, in a large bowl; mix. Put roast in a 31/2 quart or larger crock-pot. Pour barbecue mixture over roast. Cook, covered, for 8 -10 hours on low, or until meat is falling apart when touched with fork. Take out roast and shred with fork on plate. Return to slow cooker and mix thoroughly with sauce. Serve on bun or roll of choice.
Vegetable and Sausage Dinner
What you need:
• 1 lb smoked sausage, sliced in half lengthwise, then sliced in
1/2" pieces
• 2 (14.5 oz) cans green beans, drained
• 2 (14.5 oz) cans carrots, drained
• 4 c potatoes, cooked and chopped in bite sized pieces
• 26 oz jar spaghetti sauce
What you do:
• Brown sausage in a medium skillet. Add sausage and remaining ingredients to a 31/2 quart crock-pot and mix. Cook, covered, for 6-8 hours on low.
Easy Slow Cooker Chili
What you need:
• 11/2 lbs lean ground beef, browned and drained
• 1 green pepper chopped
• 1 large onion, chopped
• 28 oz can diced tomatoes, undrained
• 15 oz can tomato sauce
• 15 oz can chili beans, undrained
• 15 oz can chickpeas, drained and rinsed
• 1 T chili powder
• 2 t cumin
• 11/2 t dried oregano
• 1 t dried red pepper flakes
What you do:
• Add all ingredients to a 3.5 quart or larger crock-pot and mix. Cook, covered, for 6-8 hours on low. Serve with sour cream and/or additional red pepper flakes per taste.
